forget the post a day....
tonight i made fish tacos. i used tilapia and this recipe. they were good. i meant to take pictures.
served with fruit salad and followed up with raspberry sorbet and coconut cookies.
for an appetizer, i threw together a corn salsa-ish kinda thing that we ate with tortilla chips.
1 can corn, drained
1 can black beans, drained and rinsed
about 1/4 cup red onion chopped
one diced ripe avocado
cilantro chopped
juice from one lime
a little salt
will make it all again!

Speaking of fish
We're trying to eat a little bit more fish these days. It isn't hard for us to eat a little bit more because we pretty much each none at home. Well, there is the occasional can of tuna for salad but I think it may have been over a year since I've even done that... Tonight - mission accomplished. Sort of. I've been rather reluctant. Not because I don't like fish - which is true and probably lends itself to a lack of motivation - but because of the great price paired with great risk of failure. Give me chicken, pork, or beef, and I feel fairly confident that I can make it edible, dare say, fairly tasty. But fish. Not so much. Do I spend a lot on "good" fish and risk messing it up or do I buy "cheap" fish to test out my skills and not know if it isn't quite as tasty because it isn't quite as "good?" hmmm. today I gave up. and gave in. and bought that $5.99 box of salmon patties. 9-11 minutes in the oven + a little sour cream and lemon juice + mixed greens + a whole wheat bun + a little freshly ground pepper = not bad.

1 to 30...
we're almost there...but not quite finished.
today I did accomplish a handful of things:
wrote a letter to my future self (as suggested by Terry DeBarger)

3 to 30...
yoga.
a bridge.
today i attended my first real yoga class. you will be pleased to know that i put aside my souls and have restored my energy in myself....ah....not really. i did enjoy the stretching!
we also headed into the city to traverse the Golden Gate Bridge. We ended up only walking over half of it - it was cold and wind.y Actually, felt quite nice...but we had a dinner reservations. yummmm. the kozdons (see motorcycle ride), my cousin connor, and the three of us made the trek. more pictures to come (we got there without a battery in our camera!)
only 2 more days - and a lot to do!
